Ingredients for 1 servings:
- 100 ml oat milk (oat drink)
- 75 ml soy milk (soy drink), vanilla flavor
- 80 g butter substitute
- 2 g salt
- 21 g fresh yeast or 7 g dry yeast
- 100 g applesauce
- ½ vanilla pod(s), including the pulp
- some sesame
- some food coloring
- 500 g flour
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 13 hours 25 minutes
Dissolve the yeast in the oat milk. Add the soy milk, applesauce, salt, vanilla pulp, and softened butter substitute. Drizzle in the food coloring according to your preference. Stir in the flour until you have a nice, smooth dough. Cover and let rise for 30 minutes at approximately 20°C. Then refrigerate, covered, for 12 hours. On the day of baking, divide the dough into 3 equal pieces and roll them into equal-length strands. Braid these into a loaf and let rise, covered, for about 30 minutes on a baking sheet lined with baking paper. Preheat the oven to 200°C fan/convection oven. Brush the loaf with a little oat or soy milk and sprinkle with sesame seeds. Bake in the preheated oven on the middle rack for about 25-30 minutes.
