Stuffed pancakes with red cabbage

Ingredients for 4 servings:

  • 200 g flour
  • 4 eggs, size M
  • 375 ml milk
  • Salt
  • 4 tbsp butter
  • 1 onion(s)
  • 1 apple
  • 1 tbsp oil
  • 1 jar red cabbage, approx. 350 g
  • 80 g raisins
  • salt and pepper
  • 1 tsp paprika powder
  • 1 tsp cinnamon powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

For the batter: Mix the flour, milk, eggs, and 1/2 teaspoon of salt into a smooth batter. Let it rest for 15 minutes. In the meantime, peel and chop the onion. Peel, halve, core, and thinly slice the apple. Heat the oil in a pan and sauté the onions. Then add the red cabbage and cook over low heat for about 10 minutes. Add the apple slices and raisins and cook for another 5 minutes. Season with salt, pepper, paprika, and cinnamon. Heat the butter in a pan and use the pancake batter to make 8 golden-brown pancakes. Fill the pancakes with the red cabbage mixture, roll them up, and sprinkle with parsley. Serve immediately!
