Ingredients for 4 servings:
- 2 bell peppers, yellow, finely diced
- 1 bell pepper(s), red, finely diced
- 1 carrot(s), finely diced
- 2 tomatoes, finely diced
- 2 onions, finely diced
- some olive oil
- 1 bunch fresh basil, finely chopped
- 1 shot of white wine
- Salt
- pepper
- Oregano, dried
- 5 dl vegetable broth
- 3 tbsp tomato paste
- some sauce thickener, as needed
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Sauté the diced vegetables in olive oil, stir in the basil, deglaze with white wine, and season. Add the stock and simmer for about 20 minutes. Add the tomato paste and mix well. Simmer for another 10 minutes, then thicken with a little thickener if needed and season to taste. Cook the pasta according to the package instructions and pour the sauce over it. Done.
