Yellow pear tomato salad on spinach

Ingredients for 2 servings:

  • 15 m.-sized tomato(s) (yellow pear tomatoes)
  • 300 g leaf spinach
  • 1 m.-large Pepper
  • 1 small bunch of flat-leaf parsley
  • 1 clove(s) garlic
  • 1 small onion(s), red
  • Balsamic vinegar, white
  • olive oil
  • Salt and pepper, black, from the mill
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quarter the tomatoes, halve the peppers lengthwise, then cut into small pieces. Place both in a bowl. Finely chop the garlic and onion and place in a measuring jug with salt, sugar, and a little more coarsely ground pepper. Add a good ratio of balsamic vinegar and oil and mix well. The dressing can now be added to the tomato and pepper mixture. Cut the spinach into strips and add to boiling, salted water for 4-5 minutes. Drain and let cool slightly. Then arrange on a plate and top with the tomato salad. Roughly chop the parsley and sprinkle over the salad.
