Monkfish on fennel vegetables

Ingredients for 2 servings:

  • 400 g monkfish fillet(s)
  • 2 small fennel
  • 5 cl pastis
  • 2 tsp onion granules
  • 1 tsp garlic granules
  • 2 tbsp olive oil
  • 50 ml vegetable stock
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Preheat the oven to 200°C (top/bottom heat). Finely slice the fennel and mix with all the other ingredients, except for the monkfish. Place the vegetables in a roasting pan and cook in the oven for about 35 minutes. Place the fish on top of the vegetables and cook for another 25 minutes. Season with salt and pepper. Tip: Sweet potatoes go well with this dish.
