Apple and black sausage dumplings on mango sauerkraut

Ingredients for 2 servings:

  • 180 g black pudding (black sausage)
  • 30 g onion(s), finely diced
  • 2 eggs, size M
  • 40 ml milk
  • 80 g breadcrumbs
  • ½ apple, diced
  • 10 grains of allspice, freshly ground
  • 1 tsp marjoram
  • some nutmeg
  • Salt and pepper, freshly ground
  • 300 g sauerkraut, cooked
  • ½ mango(s), diced

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Black pudding with a twist

Mix the breadcrumbs with the milk and eggs. Fry the onions in a little oil, add the diced apple, and stir in the finely chopped black pudding until dissolved. Knead into a dough with the breadcrumb mixture. Season with marjoram, allspice, nutmeg, salt, and pepper. Heat the cooked sauerkraut in a pan and add the diced mango. Using wet hands, form six dumplings from the dumpling dough, place them on the sauerkraut, and simmer for about 20 minutes. Serve with boiled potatoes. Horseradish mustard goes well with this.
