Noodles with peanut cheese sauce

Ingredients for 2 servings:

  • 1 zucchini
  • 3 spring onions
  • 130 g broccoli florets
  • 1 ball of mozzarella
  • 200 g cream cheese
  • 3 tbsp peanut butter
  • 300 g pasta
  • ¼ liter of water
  • Parsley
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cook the pasta according to the package instructions until al dente. Quarter the zucchini lengthwise and finely chop, slice the spring onions into rings, and shred the mozzarella. Sauté the spring onions in oil, briefly fry the zucchini and broccoli, and deglaze with water. Bring to a boil, then add the cream cheese, mozzarella, and peanut butter. Simmer for about 5-10 minutes, depending on how tender you want the broccoli to be. Season with salt and pepper and add the drained pasta. Finally, sprinkle with the finely chopped parsley and mix everything together. Enjoy!
