Ingredients for 4 servings:
- 200 g smoked goose breast, in wafer-thin slices
- 2 tbsp lemon juice
- 4 tbsp balsamic vinegar
- 7 tbsp olive oil
- 2 tbsp bell pepper(s), green, very finely diced
- 2 tbsp celeriac, very finely diced
- 2 tbsp spring onions, very finely diced
- 2 tbsp carrot(s), very finely diced
- 1 pinch of mustard
- salt and pepper
- some lamb’s lettuce as garnish

You can order the goose breast ready-made in wafer-thin slices from your local poultry dealer. Arrange the smoked goose breast slices thinly on a large, flat plate. Mix all the other ingredients into a vinaigrette and spread it over the goose breast slices. If desired, add a little coarse pepper from the pepper mill and garnish with the lamb’s lettuce. Let it stand for about 10 minutes. Serve with a dry red wine and a baguette.
