Waffles with chia seeds

Ingredients for 2 servings:

  • 2 bananas
  • 4 eggs
  • 3 tbsp, heaped chia seeds
  • some cinnamon
  • 1 pinch of salt
  • some coconut oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Preheat the waffle iron to medium heat. Peel the bananas, place them in a tall bowl, and mash them with a blender. Then add the eggs and whisk. Add the cinnamon and salt, and finally stir in the chia seeds. The mixture can be used immediately, even if it’s a bit runny; the chia seeds don’t need to soak. Brush both plates of the hot waffle iron with a little coconut oil. Carefully pour the batter into the center of the waffle iron. Just enough to leave about 1 cm of space free. Closing the waffle iron will spread the mixture to the edges. Bake the waffle for about three to four minutes until the waffle is browned to your liking. Tastes delicious with jam, fresh fruit, ice cream, or simply on its own. Make two waffles per person/serving. Note: the waffles won’t be as fluffy and thick as waffles made with flour and baking powder.
