Ingredients for 1 servings:
- 300 g pumpkin(s)
- 300 g flour
- 200 g sugar
- 1 packet of baking powder
- 2 eggs
- 150 g margarine / butter
- 100 g brittle, hazelnuts or chopped walnuts
- 100 g chocolate sprinkles
- 1 pack of cake icing, chocolate glaze / powdered sugar
- 50 ml milk
- 1 dashes lemon juice, or 1 tsp lemon flavoring
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Blend the pumpkin in a blender until smooth. Mix the flour, sugar, baking powder, eggs, margarine, and milk until smooth. Then add the pumpkin puree, chocolate sprinkles, and nuts. Pour everything into a cake pan. Bake at 175 degrees Celsius for about 55 minutes (baking time may vary slightly; please do the toothpick test). Once cooled, cover with chocolate glaze or sprinkle with powdered sugar. There are many types/varieties of pumpkin. I used the more nutty pumpkin here. This also gives the cake a beautiful color. The cake is wonderfully moist and tastes freshly baked the next day.
