Ingredients for 3 servings:
- 450 g potatoes, small
- 400 g chicken breast fillet(s)
- 100 g tomatoes, dried in oil
- 1 ½ tsp dried herbs of Provence
- 50 ml dry white wine
- 1 tsp honey
- 6 tbsp olive oil
- some capers
- some caper apples (caper berries), large
- salt and pepper
- chili powder
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes
One Pot Potatoes, a light poultry dish flavored with sun-dried tomatoes
Heat the oil in a large pan and fry the peeled, raw potatoes for 15 to 20 minutes, until they are nicely browned all over. Meanwhile, rinse the chicken breast fillets with cold water and dry with kitchen paper, then cut into strips approximately 2 cm long. Push the potatoes to the edge of the pan and fry the chicken breast fillet strips in the center of the pan on both sides, seasoning the potatoes and meat with salt and pepper. Finally, sprinkle the chili powder and herbs over the potatoes. Deglaze everything with the white wine and stir in the honey. Simmer the wine liquid. Meanwhile, drain the sun-dried tomatoes, add them to the pan, and heat gently over reduced heat. Just before serving, scatter the capers over the dish. Arrange the gourmet potatoes on plates and garnish with the large capers.
