Bob's Endive Salad for Kids

Ingredients for 3 servings:

  • 5 heads of lettuce (endive, young, tender)
  • 1 apple
  • 3 tsp sauce (cocktail sauce)
  • 2 tbsp sugar
  • 4 tbsp olive oil
  • 2 tbsp vinegar (e.g. apple cider vinegar)
  • 1 tsp soy sauce
  • n. B. Herbs of Provence
  • n. B. Surimi

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Prepare the vinaigrette and pour it into the bowl. Add all the other spices and mix. Slice the endive, starting at the tip, until it’s unusable. Peel and core the apple, and cut it into fairly small cubes. If you’re adding surimi, slice it and mix it in. Mix well and let it sit for about 1 hour. Serve cold.
