Sweet potato soup with ginger

Ingredients for 4 servings:

  • 1 piece(s) ginger root
  • 500 g sweet potatoes
  • 1 vegetable onion(s)
  • 1 tbsp rapeseed oil
  • 500 ml vegetable stock
  • 100 ml cream
  • salt and pepper
  • some chervil
  • e.g. freshly squeezed orange juice

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and dice the ginger and onion. Peel and dice the sweet potatoes. Heat the oil and fry the onion until translucent. Add the ginger and sweet potatoes and fry for 2 minutes. Then pour in the stock, bring to a boil, and simmer for about 10 minutes. Then add the cream and puree everything. Bring to a boil again and season. Garnish with chervil. Tip: I add a freshly squeezed orange at the end for an additional, light fruity note.
