Wild garlic mussels

Ingredients for 4 servings:

  • 1 package of pasta (shell pasta), large, or large cannelloni
  • 1 pack of low-fat curd cheese
  • 2 bunches of wild garlic
  • 2 garlic cloves, squeezed
  • 2 jars of tomato sauce, together about 1 liter
  • 100 g cheese, grated
  • 1 small bunch of spring onions
  • salt and pepper
  • nutmeg
  • olive oil

Cook the pasta until slightly firmer than al dente, then rinse and allow to cool. Mix the low-fat quark with salt, pepper, nutmeg, and garlic. Finely chop the wild garlic and slice the spring onions. Mix both with the low-fat quark and stir well. Grease a deep ovenproof dish with olive oil and pour in a jar of the tomato sauce. Fill the pasta shells with the quark mixture and place in the sauce. Then pour the second jar of sauce over the pasta to coat everything and sprinkle with cheese. Bake in the oven at 180°C for 45 minutes. Tip: Ricotta or a mixture of quark and cream cheese works well instead of quark.
