Pasta with carrot sauce from one pot

Ingredients for 2 servings:

  • 250 g pasta
  • 500 g carrot(s)
  • 300 ml vegetable stock
  • 250 ml milk
  • salt and pepper
  • 2 tbsp butter
  • Parmesan

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

vegetarian, simple, delicious

Peel the carrots and dice them. Melt the butter in a large saucepan and sauté the carrots until they are just tender. Add the pasta. Pour in the vegetable stock and milk and cook over medium heat with the lid partially open until the pasta is al dente. Season with salt and pepper to taste. Serve sprinkled with Parmesan cheese.
