Ingredients for 1 servings:
- 1 zucchini, finely diced
- 1 potato(s)
- 1 slice(s) pineapple
- 250 g minced meat, half and half
- curry powder
- some savory
- salt and pepper
- 100 ml milk or coconut milk
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
with pineapple
Finely dice the zucchini, thinly slice the potato and then finely dice it (no pre-cooking necessary), and finely dice the pineapple. Add everything to a pan with the minced meat (don’t season it beforehand) and a small pinch of savory and fry until well-cooked. Season with salt and pepper. Finally, add the milk and stir in the curry until the milk turns a light yellow. Note: I came up with this recipe because I had too many leftovers after making a casserole. I experimented with the leftover potatoes, minced meat, and zucchini. And it tasted simply wonderful!
