Beef medallions
- 200 g Beef fillet
- 1 tbsp Clarified butter
- Salt
- Pepper
Truffle grease succine
- 250 g Flour
- 250 g Semolina
- 5 Pc. Eggs
- 2 tsp Water
- 150 g Cream
- 1 tbsp Truffle oil
- 1 Pc. Truffles fresh
Beef medallions
- Sear the medallions at the highest level (1:20 minute) and then place them in the oven for about 13 minutes at 130 ° C (middle rack). Let the medallions rest for a minute and then season with salt and pepper on both sides.
Truffle grease succine
- First knead the eggs, flour, semolina and water into a dough and then let it rest for an hour. Using a pasta machine, shape fettuccine out of the dough, allow to dry and boil in plenty of water.
