Gajor Ka Halwa – Carrot Halwa

The perfect gajor ka halwa – carrot halwa recipe with a picture and simple step-by-step instructions.

To garnish:

  • 650 kg Grated carrots
  • 125 g Sugar
  • 40 g Ghee
  • 0,5 tsp Green cardamom seeds, ground
  • Sliced ​​almonds
  • Chopped pistachios
  • Raisins

Masala Chai:

  • 4 Pc. Peppercorns
  • 4 Pc. Cloves, coarsely ground
  • 8 Pc. Green cardamom, ground
  • 1 Pc. Cinnamon stick
  • 1 tsp Dried ginger
  • 1 tsp Ground fennel
  • 6 tbsp Assam tea
  • 500 ml Milk
  • 6 tbsp Sugar

Gajor ka Halwa – Carrot Halwa:

  1. Bring the milk to a boil in a large saucepan. Simmer the carrots over medium heat for about 25 minutes, stirring constantly. Stir in the sugar and simmer the carrots for another 25 minutes until the liquid has completely evaporated.
  2. Add the ghee and stir for about 5 minutes. Stir in the ground cardamom. Put everything in a bowl. To serve, pour onto plates and decorate with pistachios, almonds and raisins.

Masala Chai

  1. Bring 1 liters of water to a boil in a large saucepan. Add all the spices and cook over medium heat for 2 minutes.
  2. Add the tea leaves and cook for 1 minute. Reduce the heat and let the tea steep for 5 minutes. Pour in the milk and bring to the boil again. Reduce the heat again and simmer for another 2 minutes.
  3. Remove the saucepan from the heat and stir in the sugar. Pour into cups through a hair sieve and serve hot.
