Prepare Top Pan Roast without Fat
The perfect prepare top pan roast without fat recipe with a picture and simple step-by-step instructions.
- 1 kg Pig topside
- 1 pinch Salt and pepper
- 3 liter Water
- Let a saucepan get hot, wash the top, season with salt and pepper.
- Bring a pot of water to a boil. Put the top bowl in, turn the temperature down a bit. Always make sure that the water in the pot is only covered.
- Repeat the whole thing for about 1.5 hours, always pouring water on it is very important. There must always be water in the pot. Lid always closed.
- This keeps the top shell moist when roasted and even gets color.
- The sauce forms all by itself, through the constant infusion.
- When the roast is done, the sauce may be seasoned and thicken with starch. I have thickened with butter and flour.
- We also had Spätle homemade (see my cookbook). The roast was really juicy and low in fat because it was poured on with water.
