Dance of Vampire Soup (beetroot Soup)

The perfect dance of vampire soup (beetroot soup) recipe with a picture and simple step-by-step instructions.

  • 800 g Boiled beetroot
  • 100 g Potato
  • 100 g Diced onion
  • 30 g Ginger
  • 2 tbsp Applesauce
  • 700 ml Beetroot juice
  • 150 ml Coconut milk
  • 0,5 Pc. Chilli fresh
  • 1 tbsp Olive oil
  • 100 ml Whipped cream
  • 0,5 tsp Horseradish
  • 1 pinch Nutmeg
  • Salt and pepper
  • Honey
  1. Sweat the onion cubes in olive oil until translucent, then add the ginger with the finely chopped beets and the peeled potatoes, the chilli (seeds), beetroot juice and coconut milk. Simmer everything together until the potatoes are soft. Then remove the chilli again and puree everything else with a mixer. Finally, season everything with spices, fold in some applesauce, whip the cream with horseradish and serve on top of the soup.
