Granny Smith Soup with Deep Sea Prawns

The perfect granny smith soup with deep sea prawns recipe with a picture and simple step-by-step instructions.

  • 100 ml Noilly Prat
  • 20 cl White wine
  • 20 ml Port white
  • 20 cl Red wine
  • 0,5 Pc. Leek
  • 3 Pc. Shallots
  • 2 Pc. Lemongrass sticks
  • 3 tbsp Coconut flakes
  • 2 Pc. Granny Smith apples
  • 1 bunch Parsely
  • 1 Pc. Banana
  • 300 ml Poultry stock
  • 300 ml Cream
  • 300 ml Coconut milk
  • 1 tsp Green curry paste
  • 1 tsp Madras curry
  • Salt and pepper
  • 200 g Raw unsmoked pork bacon
  • 20 Pc. Shrimp tails
  • 100 g Butter
  • 2 Pc. Garlic cloves
  1. Dice the bacon and sweat vigorously with lemongrass and the diced shallots. Deglaze with Noily Prat and white wine, white port and red wine, reduce and add about 1/3 of the leek, cut into small pieces. Add diced Granny Smith and the bananas too. Add a bunch of parsley and simmer for about 1 hour. Finally season and add the curry paste and curry in doses. Pass after about 1 hour. Then the shrimp are fried in a little butter and garlic, skewered and served with it.
