Bean Symphony with Pep

The perfect bean symphony with pep recipe with a picture and simple step-by-step instructions.

  • 125 g Beans white, dried
  • 125 g Black beans, dried
  • 125 g Kidney beans, dried
  • 200 g Pork belly
  • Clarified butter
  • 300 g Mixed minced meat
  • 1 piece Leek, about 200 gr.
  • 2 piece Onion
  • 1 piece Chinese garlic
  • 2 tbsp Tomato paste
  • 500 ml Port red
  • 1000 ml Beef broth ….. link see below …..
  • 1 Can Chopped tomatoes
  • 1 piece Red chilli
  • 1 piece Green peppers
  • 1 tsp Dried thyme, or 5 fresh stems
  • Salt
  • Black pepper from the mill
  • 2 tbsp Sweet paprika
  • Chocolate 70% cocoa … see tip

The evening before

  1. Soak the beans in cold enough water.

Preparation

  1. Put the beans on top and cook until soft. Then pour over a sieve and collect the beans.
  2. While the beans are cooking, we prepare the rest, so that at the end only the beans have to be added.
  3. Cut the belly into small cubes. Peel the onion and garlic. Halve the onion and cut diagonally into thin strips. Quarter the garlic. Clean the leek and cut into small slices. Core the peppers, also cut out the white partitions and cut into mouth-sized pieces. Core the chilli and cut into small pieces.
  4. Heat some clarified butter in a large roaster and fry the bacon cubes crosswise, then add the minced meat and fry until crumbly. Now add the leek with the onions and let sear briefly. Add tomato paste and toast briefly.
  5. Now extinguish with the red wine and let it boil down briefly. Now add the beef broth, tomatoes, paprika, garlic and chilli and season with the spices. Let it simmer gently until the peppers just have a “bite”.
  6. Now the beans are added and the whole thing is only heated to just before the boiling point. Then season again to taste.
  7. Put the finished stew in a soup cup and now ….. enjoy your meal ……
  8. Tip: ….. If you want to try it, you can now give some coarsely grated chocolate, at least 70%, over it …. tastes g..l ..;))
