Creamed Mushrooms
The perfect creamed mushrooms recipe with a picture and simple step-by-step instructions.
- 1500 g Mushrooms
- 400 ml Sweet cream – cream
- 200 ml Sour cream
- 250 ml Riesling dry
- 2 Onions
- 2 tbsp Instant kosher broth
- Lemon juice
- 4 tbsp Flour
- Rapeseed oil
- 2 tsp Pepper Cajun Creole
- 2 tsp Maggi wort liquid
- The creamy mushrooms are of course best made with freshly picked mushrooms. but since i won’t be in bavaria in february. I can go to the forest to get some, outside of the mushroom season I make do with TK or canned products. that works too.
- Sweat the onions in plenty of oil + make a roux with the flour. add mushrooms and spices.
- Deglaze with the sweet cream. add the sour cream + the stock and let thicken for 3 minutes while stirring.
- Now add the Rieslig wine and let it steep for 10 minutes. Add lemon juice.
- Finally, season with pepper, salt and a splash of maggi herb seasoning.
