Gevrek (Simit)

The perfect gevrek (simit) recipe with a picture and simple step-by-step instructions.

  • 500 gr Flour
  • 1 dice Fresh yeast
  • 100 ml Water
  • 100 gr Natural yoghurt
  • 2 tbsp Sugar
  • 1 tbsp Salt
  • 2 tbsp Melted butter
  • 1 glass Sesame
  1. Certainly most of them only know the Turkish expression “Simit”. But if you come from the west of Turkey, say from the city of Izmir like me, they are called “Gevrek” translated: Crispy …
  1. Dissolve the yeast in lukewarm water, add sugar and salt. Put the flour in a bowl, add the butter and yoghurt and knead briefly. Fold in the yeast-water mixture and work everything into a dough that is no longer sticky.
  1. Let rest in a warm place for 60 minutes.
  1. After 60 minutes, when the dough has doubled, knead again. Divide the dough into balls of the same size, about the size of a peach. Roll into sausages and shape into rings. Process all dough balls in this way.
  1. Bring water to a boil in a saucepan and dip the sesame rings in them for 1/2 minute. Take out of the water and turn in sesame seeds on both sides.
  1. Place on a baking sheet lined with baking paper and bake at 190 degrees for 20 minutes until crispy.
  1. You can find it on every corner in Turkey, no matter how small, and for me a popular breakfast or snack for in between :))
