Pistachio Macarons
The perfect pistachio macarons recipe with a picture and simple step-by-step instructions.
For the filling
- 50 g According to unsalted pistachios
- 150 g Sifted powdered sugar
- 2 Egg white size M 70-72 grams
- 40 g Granulated sugar
- 1 pinch Salt
- 80 g Butter
- 80 g Marzipan paste
- 2 ml Monin armareto syrup or amaretto
- 1 pinch Green food coloring
- The 2 egg whites must not weigh more than 72 grams. Beat the egg whites with a pinch of salt with a food processor – gradually add the granulated sugar until the egg whites are firm and shiny. The crystal twitch must have completely dissolved (if necessary, rub some egg white between the fingertips, no sugar crystals should be felt). If you want the pistachio macarons a little greener, you have to add some color now – I use the gel colors from Wilton
- Brush the finely ground almonds (almond flour) with the pistachios and powdered sugar through a hair sieve, preferably twice. Then add the mixture to the egg whites and fold in. Until a mass is created that has the consistency of viscous lava. Fill into a piping bag and point on a macaron tray (if you don’t have one at hand, make circles and the baking paper draw a diameter of 3 cm (there are also templates for printing out on the Internet. You can also find a box to make yourself for 3 macarons at Letizias Gourmet Delights for your own use) Tap the tray from below – should make the tips disappear. If necessary, you can also help with a moistened finger. Let the macaron halves dry for about 1 hour. Bake in a preheated oven at 140 degrees (convection) for about 14 minutes.
- 3rd filling: Mix the butter with the marzipan mixture, the amaretto syrup or liqueur and the mother-of-life color to a smooth mixture. Put in a piping bag (I only use disposable piping bags). The mass can also be frozen, as can the macaron halves! Refrigerate!
- Remove the cooled macaron halves from the baking paper and sprinkle the filling onto one half and cover with the other half.
