For the porcini mushroom ragout
- 1 kg Steinpilze frisch
- 20 gr. Butterschmalz
- 100 gr. Speckwürfel
- 1 mittelfroße Zwiebel gehackt
- 1 EßL Mehl

- 1 tsp Tomatenmark
