Lettuce Soup

The perfect lettuce soup recipe with a picture and simple step-by-step instructions.

  • 1,5 piece Lettuce
  • 2,5 piece Shallots
  • 115 g Butter
  • 560 Milliliters Vegetable broth
  • 600 g Creme fraiche Cheese
  • 0,75 Fresh cress
  • 1,5 tablespoon Lime juice
  • Salt
  • Pepper
  • Nutmeg
  1. Fry the diced shallots in about 30 grams of butter. Put the lettuce hearts of the washed lettuce aside.
  2. Now add the lettuce leaves to the shallots and cook them together for 5 minutes. Top up with broth and bring to the boil. Puree together with the crème fraîche with a mixer. Salt and simmer for 10 minutes.
  3. Then cut the lettuce hearts into strips, remove the soup from the heat and beat the remaining cold butter in pieces underneath. Season to taste with nutmeg, pepper, salt and lime juice.
  4. Add the lettuce hearts just before serving and sprinkle with 3/4 of a box of cress.
