What Is Crustacean Foam and How Is It Used?

Crustacean foam is a type of sauce made from carcasses (shells of crustaceans) such as lobster, shrimp, or Norway lobster.
For this purpose, a start is made together with root vegetables and filled with fish stock, the whole thing is boiled down for about 30 minutes (no longer). Then, if necessary, refine and froth with a little cream or crème fraîche.
Crustacean foam goes well with white sea fish such as turbot or halibut but also tastes very good with scallops.
