When peeling onions, it is important to remove the outer, very firm skin without damaging the onion skin underneath. If this is injured, the onion juice leaks out – and that’s why we start crying.
That’s why it’s best to start with the base of the leek, i.e. peel from the top to the root. Do not remove the root, it holds the onion together very well if you want to cut it into cubes, for example.
