Szeged goulash is a Hungarian dish made with spicy spices, fatty pork, and sauerkraut. In the following article, we will show you how to prepare it yourself.
Preparing Szeged goulash – the ingredients
In order to be able to cook Szeged goulash for four people, you need the following ingredients.
- The main ingredients are 500 grams of sauerkraut next to 500 grams of pork and beef – in the form of goulash.
- You will also need 500 grams of onions, 750 milliliters of water, and a glass of red wine.
- You will also need the following spices: three tablespoons of sweet paprika powder, one tablespoon of hot paprika powder, and three tablespoons of Ajvar, salt, and pepper.
- Finally, you need some oil, sauce thickener or flour, and possibly sour cream or crème fraîche.
The recipe for Szeged goulash
The pure working time for this dish is 35 minutes. Plan more time, however, as a rest period of about 3 hours is still necessary.
- Cut the goulash meat into bite-sized pieces, removing any tendons as you go.
- After that, put the chopped pieces in a bowl and season with salt and pepper.
- Then you can add two tablespoons of sweet paprika powder, half a tablespoon of hot paprika powder, and about four tablespoons of oil.
- Mix everything thoroughly and then leave the meat in the marinade for at least two hours.
- Meanwhile, you can prepare the sauerkraut and onions. The latter is particularly suitable to cut into rings.
- If the meat has been in the marinade long enough, you can heat oil in a sufficiently large pan and fry the meat piece by piece.
- Shortly after, you should add the onion rings and the remaining paprika powder along with the award.
- In the next step, after short frying, deglaze the whole thing by adding red wine.
- Finally, add a little water and let it simmer for an hour.
- Then add the sauerkraut to the pan and let it simmer for another half an hour so that the goulash becomes tender. The flavor of the sauerkraut also blends with the meat during the process.
- When the goulash is ready, you can thicken the sauce of the dish. You can do this with your choice of ready-made sauce thickener or with some flour that has been stirred into cold water until smooth.
- Finally, depending on your taste, you can add a little sour cream or crème fraîche before serving.
- Boiled potatoes or dumplings are ideal as side dishes.
