Lunchbox Recipes: Delicious pasta salad to go
The pasta salad is a classic that is easy to portion and also has a long shelf life. You can also vary the ingredients seasonally.
- Boil the noodles in salted water according to the instructions and then allow them to cool. You can use any type of pasta for the pasta salad. Meanwhile, cut the remaining ingredients into small cubes.
- Add diced ham or bacon. You also need cheese, mild Gouda is best for this. Cut this into small cubes. If you want a vegetarian version, just leave out the ham.
- The pasta salad tastes best with pickles, corn, and peppers. Dice these ingredients as well and mix them in.
- In the end, add the cooled pasta to the remaining ingredients and stir in crème fraîche. If the pasta salad is too dry for you, you can stir in some pickle water.
- The pasta salad is ideal for portioning and is perfect for taking away in a lunch box.
Sandwiches or baguettes for the lunch box?
Especially in the warm summer months, sandwiches or baguettes are ideal for lunch at work. Baguettes with chicken, rocket, and parmesan are particularly popular:
- Wash and trim 25g rocket and set aside about a third. Mash the rest with half a tablespoon of pine nuts, a clove of garlic, and 25ml olive oil. Season the pesto with salt and pepper. Split a baguette in half and spread pesto on both sides.
- Spread the trimmed lettuce leaves on the underside. Mix some mayonnaise with lemon juice and the seared, chopped chicken breast. Place this on the bottom of the baguette, too, and spread the rest of the arugula over it. Now you can sprinkle the baguette with Parmesan if you like.
- Sandwiches or baguettes can also be prepared with other ingredients as desired. For example with cheese and ham or vegetarian with avocado or tofu.
Sweet instead of sour: delicious things for the breakfast box
Instead of getting a croissant or a piece of cake from the bakery on the way to work, pack a healthy breakfast in your lunch box. The muesli mix with fresh fruit is not only healthy but also provides energy for the whole day.
- Squeeze orange and soak about 40g of rolled oats overnight. Store the soaked oatmeal in the refrigerator.
- Wash and cut the fruit the next morning. You can use any fruit you like. The healthiest option is a seasonal fruit.
- Mix the rolled oats and the fruit with 120 grams of natural yogurt and possibly with nuts or raisins if you like. Your lunch box muesli is ready.
