Warming Up Rice: Why You Should Pay Attention To Meticulous Hygiene

Cooked way too much rice that left a lot on the dining table? If the rice has been sitting around for a while, later use of leftovers can become problematic. Here you can find out what you need to pay attention to when heating up rice in order to avoid a possible risk of germs.

If you want to store cooked rice and reheat it, you have to be meticulous about hygiene. Because: Rice almost always contains spore-forming bacteria of the Bacillus cereus type, warns the Bavarian consumer advice center.

Reheat rice: there is a risk of germs

“The spores of these bacteria are not killed when heated. New bacteria that form toxins can develop from them during storage,” explains consumer and nutrition expert Susanne Moritz.

These bacteria multiply particularly quickly when cooked rice is slowly cooled at room temperature or kept warm at lukewarm temperatures. As a result, the toxins (i.e. poisons) from these bacteria can cause vomiting and diarrhea.

Leftover rice dishes can still be reheated, but only if you take a few precautions. It is important that the rice is cooled quickly in the refrigerator or kept warm at over 65 degrees.

This prevents germs from growing or spores from germinating. But even then, cooked rice should be consumed within a day.
