Ingredients for 1 servings:
- 4 kg pork, with high tendon content and max. 5% fat
- 2 kg pork belly, without rind and max. 60% fat
- 2 kg bacon (back bacon without rind)
- 2 kg ice – snow
- Spice(s) per kilo:
- 18 g salt
- 3 g cutter aid (optional)
- 2 g pepper
- 1 g mace
- 1 g ginger
- 0.3 g cardamom
- 1 g lemon(s) powder
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Add the spices and the egg whites and blend until finely chopped. Make sure the meat doesn’t get warm.
