Ingredients for 1 servings:

  • 4 kg pork, with high tendon content and max. 5% fat
  • 2 kg pork belly, without rind and max. 60% fat
  • 2 kg bacon (back bacon without rind)
  • 2 kg ice – snow
  • Spice(s) per kilo:
  • 18 g salt
  • 3 g cutter aid (optional)
  • 2 g pepper
  • 1 g mace
  • 1 g ginger
  • 0.3 g cardamom
  • 1 g lemon(s) powder

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Add the spices and the egg whites and blend until finely chopped. Make sure the meat doesn’t get warm.
