Amaretto – Plum – Almond – Jam

Ingredients for 1 servings:

  • 1,000 g plum(s)
  • 1 packet of gelling sugar (2:1)
  • n. B. Amaretto
  • ¼ pack of pudding powder (almond flavor)
  • some lemon juice or citric acid

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Pit and halve the plums. Place them in a saucepan with the gelling sugar. Mix and set on the stove on high until liquid forms. Purée with a hand blender and pass through a (coarse) sieve. Return the collected liquid to the stove and set on high. Whisk in the amaretto (amount to taste, but not just a few drops!), lemon, and custard powder (please don’t use more, otherwise it will be too sweet and thick). Let the mixture cook for about 4 minutes on high, stirring frequently. Test for setting (put a few drops on a small plate and check if it sets). If the mixture isn’t ready, cook for another 1-2 minutes. Fill jam jars (previously rinsed with boiling water) to the brim, close the twist-off lids, and turn upside down for 5 minutes, then turn them upside down and let them rest for at least 24 hours.
