Mom's potato soup

Ingredients for 4 servings:

  • 8 potatoes
  • 4 large carrots
  • 1 stalk(s) leek
  • ½ celeriac
  • 1 can of sausages
  • ½ liter vegetable broth, homemade or granulated
  • 100 g ham, diced
  • 100 ml cream or milk
  • 2 tsp savory
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes, trim the vegetables, and chop them into small pieces. Boil the potatoes in a pot of salted water until soft. Add the vegetables to the vegetable stock and cook until soft. Fry the ham cubes in a pan until crispy. Drain the soft-cooked potatoes, set the soft-cooked vegetables aside, and skim off some of the stock and pour it over the potatoes. Mash the potatoes and add the cream and ham cubes. Add enough stock until the soup reaches the desired consistency. Add the savory (fresh is best), and bring the soup to a boil briefly. Then add the vegetables and sausage. DONE! For a vegetarian version, you can easily omit the sausages and ham cubes. This recipe is usually a hit with children.
