Ingredients for 4 servings:

  • 200 g white beans
  • 300 g smoked streaky bacon
  • 250 g carrot(s)
  • 250 g beans (runner beans), green (frozen)
  • 500 g potatoes
  • 4 onions
  • 1 apple
  • salt and pepper
  • 1 bunch of parsley

Traditional Westphalian dish

Soak the beans overnight in about 2 liters of water. Let the beans cook in the soaking water for about 1/2 hour, then add the bacon and simmer for 1 hour. Remove the bacon and chop it. Add the beans and the sliced ​​or diced potatoes, carrots, onions, and apples. Season with salt and pepper and cook for about 20 minutes, until the potatoes are tender. Add the bacon cubes and sprinkle with fresh parsley.
