Spinach pizza with feta cheese

Ingredients for 4 servings:

  • 200 g leaf spinach, frozen
  • 1 garlic clove(s)
  • 1 small onion(s)
  • 1 tbsp butter
  • 1 bunch mint or flat parsley
  • 150 g sheep’s cheese
  • salt and pepper
  • 250 g pizza dough, from the refrigerated section
  • Olive oil for drizzling
  • 2 tbsp pine nuts, alternatively almond flakes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the spinach. Peel and chop the garlic and onion, then fry in hot butter. Squeeze the spinach, chop, and stir in. Wash the herbs, chop the leaves, and fold in. Dice or crumble the cheese and add it. Season with salt and pepper. Let everything marinate for 5-6 hours. Preheat the oven to 200 degrees Celsius (Gas Mark 3). Roll out the pizza dough, cut out 4 circles (20 cm in diameter), and place them on a baking sheet lined with baking paper. Prick several times with a fork, drizzle with oil, and bake for about 8 minutes. Spread the spinach and cheese mixture on top, sprinkle with the pine nuts, and bake for another 2-3 minutes. Cut the pizzas in half and serve hot.
