Ingredients for 4 servings:

  • 4 rabbit legs
  • 2 bulbs of garlic
  • 1 chili pepper(s), dried
  • 6 tbsp olive oil
  • 250 ml white wine
  • 1 bunch of parsley
  • 1 tsp salt
  • 1 tsp black pepper

Season the rabbit legs with salt and pepper and fry in a pan with olive oil over medium heat until golden brown on all sides. Meanwhile, peel and finely slice the garlic cloves. Finely chop the parsley. Once the legs are browned, remove them from the pan and briefly fry the garlic and crushed chili peppers in the remaining fat. Return the legs to the pan and turn them several times to allow the garlic flavor to penetrate the meat. Then pour in the white wine, sprinkle with the parsley, and braise with the lid closed for about 45 minutes. Serve with fresh baguette or baked potatoes.
