Ingredients for 6 servings:
- 1 kg pork ribs
- 3 bell peppers, red
- 6 carrots
- 1 onion(s)
- 2 bay leaves
- 6 garlic cloves
- 500 g white beans
- Paprika powder, sweet, e.g. B. Pimenton de la Vera
- tsp olive oil
- salt and pepper
- 500 ml meat broth
- 5 potatoes

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Ribs with white beans
Season the ribs with salt and pepper and sear in about 4 tablespoons of olive oil. Add the sliced bell peppers, diced onion, sliced garlic, bay leaves, and beans. Once everything has taken on some color, pour in the meat broth and simmer for about 40 minutes. Meanwhile, fry or deep-fry the peeled and diced potatoes in plenty of oil, taking care not to over-brown them. They should be light yellow. Drain, place on a paper towel, and then season with salt. Add these potatoes and the paprika to the meat and vegetables and simmer for another five minutes. Season to taste with salt and pepper.
