Knead the dough ingredients thoroughly, cover, and let rest for half an hour. Meanwhile, cut the lamb, onions, and potatoes into small cubes and mix with the vegetable oil and spices to create an even filling. Roll out the dough into two thin flatbreads, like large pizzas, and spread with the filling. Carefully roll each one into two thick sausages and steam for 40 to 50 minutes. To serve, slice and serve with sour cream or a simple tomato and onion sauce. There are many variations of the filling. Beef or pork can be used instead of lamb. Pumpkin, cabbage, and eggplant are particularly popular vegetables.
