Ingredients for 4 servings:
- 1 cup(s) couscous (instant)
- 2 cups vegetable broth
- ½ tsp herbal salt
- 4 bell peppers
- 1 apple
- 1 onion(s)
- 20 g butter
- 4 tbsp water
- 3 tbsp crème fraîche
- 2 tsp curry powder
- 100 g grated cheese (Emmental, mozzarella,…)
- salt and pepper
- Fat for the mold
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Let the couscous swell in the broth and season with herb salt. Halve the bell peppers lengthwise and deseed them. Peel and core the apple. Finely dice the apple and onion. Heat butter in a pan, fry the onions until translucent, add water and crème fraîche, and season with curry, salt, and pepper. Sauté everything for 5 minutes. Add the couscous, diced apple, and cheese, mix well, and season to taste. Fill the halved bell peppers with the mixture, place them in a greased casserole dish, and bake in the oven at 200°C for about 20 minutes. Tastes delicious with a mixed salad or minute steaks. I usually make a herb sauce for the kids.
