Couscous salad with a fresh lemon yogurt sauce

Ingredients for 6 servings:

  • 500 g couscous (can be instant)
  • 3 bell peppers, colored
  • 1 cucumber(s)
  • 1 onion(s), finely diced
  • 1 ½ packs of feta cheese, diced
  • 2 tomatoes, diced
  • 500 g yogurt
  • 2 lemons, unsprayed
  • salt and pepper
  • herbs, fresh
  • Parsley

Soak the couscous (if instant) in 300ml of cold water. If using other couscous, prepare according to the instructions and allow to cool. Cut all the ingredients up to the yogurt into small cubes and mix with the couscous. A little chopped flat-leaf parsley goes well here too. The sauce: Season the yogurt with lemon juice, salt and pepper (if you like, you can also add a little garlic). Then add the fresh chopped herbs (I prefer flat-leaf parsley here). TIP: If you’re in a hurry, I’ve also used ready-made frozen herbs. Serve the sauce separately with the salad; it also goes well with grilled food.
