Japanese noodles with mushrooms

Ingredients for 4 servings:

  • 250 g udon noodles
  • 2 tbsp sunflower oil
  • 1 onion(s), red, cut into rings
  • 1 clove(s) garlic, crushed
  • 450 g mixed mushrooms (e.g. shiitake, oyster mushrooms, brown mushrooms, …)
  • 350 g Chinese cabbage or pak choi
  • 2 tbsp sherry, sweet
  • 6 tbsp soy sauce
  • 4 spring onions, cut into rings
  • 1 tbsp sesame seeds, roasted

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

quick dish with mixed mushrooms and Chinese cabbage

Place the noodles in a large bowl and cover with boiling water until completely covered. Soak for 10 minutes, or according to the package instructions. Drain thoroughly. Heat the sunflower oil in a large wok. Add the red onion and garlic to the wok and stir-fry for 2-3 minutes. Add the mushrooms and stir-fry for about 5 minutes until tender. Add the Chinese cabbage or bok choy, noodles, sherry, and soy sauce to the wok. Mix all ingredients and stir-fry for 2-3 minutes, until the liquid comes to a boil. Transfer the noodles and mushrooms to warmed bowls and sprinkle with spring onions and toasted sesame seeds.
