Ingredients for 1 servings:

  • 75 g butter
  • 50 g sugar, fine
  • ½ tsp baking powder
  • 50 g sugar syrup (golden syrup)
  • 2 egg yolks
  • 250 g flour
  • 1 tsp cinnamon powder
  • 1 tsp ginger powder

Instructions

Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 25 minutes

Cream together the butter and caster sugar. Stir in the baking powder, golden syrup, and egg yolk. Sift in the flour, cinnamon, and ginger and mix everything with a wooden spoon. Divide into two balls, knead into a dough, then let rest for 30 minutes. Preheat oven to 180 degrees Celsius (160°C fan/gas mark 4). Roll out the dough to about 0.5 cm thick and cut out shapes. Place on a baking sheet lined with baking paper. Bake for 10-12 minutes, until slightly risen and golden brown (based on a 7 cm cutter with a thickness of about 0.5 cm).
