Ingredients for 2 servings:
- 180 g pasta, e.g. farfalle, rigatoni, fusilli etc.
- 1 small shallot(s), finely chopped
- 3 tbsp olive oil
- 150 g broad beans (canned)
- 125 ml vegetable stock
- 100 g smoked bacon, diced
- 12 cherry tomatoes, quartered
- Thyme
- marjoram
- e.g. salt and pepper
- e.g. Pecorino, grated
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Pasta with Fava Beans
Cook the pasta according to the instructions. Sauté the shallot in olive oil. Add the bacon and fry. Stir in the beans and vegetable stock and simmer for about 8 minutes. Stir in the tomatoes and season with thyme, marjoram, pepper, and salt. Drain the pasta and mix. Serve sprinkled with pecorino cheese.
