Pasta with sardines and tomatoes

Ingredients for 2 servings:

  • 200g spaghetti
  • 1 small onion(s)
  • 1 can of sardines in olive oil
  • 15 cherry tomatoes (Pomodorini)
  • 1 tbsp capers
  • ½ bunch parsley, fresh
  • 6 fresh mint leaves
  • some pepperoncini
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Spaghetti with sardines and cherry tomatoes

Cook the spaghetti in salted water (Italian: coarse salt in the water). For the sauce, add olive oil to a pan and heat. Add the peeled and chopped onions and sauté until translucent. Add the cherry tomatoes, chopped mint, and parsley, and sauté for 5 minutes (the onions and tomatoes must be cooked). Add the sardines with the olive oil and break them up with a wooden spoon. Add salt, pepper, capers, and chili pepper. Mix the cooked spaghetti with the sauce. Important: The spaghetti and sauce must be ready at the same time, or the sauce slightly before the spaghetti. Never leave cooked spaghetti without sauce!
