Spaghetti with garlic and peppers

Ingredients for 4 servings:

  • 500g spaghetti
  • 10 garlic cloves
  • 4 small chili peppers, fresh or pickled or dried
  • 150 ml olive oil
  • 200 g cheese (Pecorino), alternatively Parmesan
  • 1 tbsp oil
  • Salt
  • some thyme, finely chopped
  • 1 small onion(s)

Cook the spaghetti in plenty of salted water and olive oil according to the package instructions until al dente. Peel the garlic cloves and slice them. Split the chili peppers lengthwise, remove the seeds, and finely chop (crush dried peppers with a mortar and pestle). Peel and dice the onion. Heat the olive oil in a large pan. Lightly brown the garlic, chili peppers, and onion. Add the finely chopped thyme and fold in. Drain the pasta through a sieve. Then add it to the pan, mix well, and serve immediately. Sprinkle with freshly grated cheese and serve with the remaining cheese on the side.
