Tortellini topped with tomatoes and feta

Ingredients for 2 servings:

  • 1 pack of tortellini with ricotta and spinach filling
  • 1 can of tomatoes, peeled
  • 1 pack of feta cheese
  • 1 carrot(s)
  • ½ onion(s)
  • 1 garlic clove(s)
  • Salt
  • pepper
  • basil
  • oregano
  • olive oil
  • some Parmesan

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the tortellini according to the package instructions. Finely chop the onion, crush the garlic, and sauté both in a little oil. Crush the tomatoes with your hands and add them to the onions and garlic. Thinly slice the carrot and add it to the sauce. Season with basil, oregano, pepper, and a little salt. Brush an ovenproof dish with oil. Add the cooked tortellini and cover with the tomato sauce. Finely crumble the feta cheese over the top with your hands and then sprinkle some Parmesan cheese over the feta cheese. Place the dish in the oven preheated to 180°C and bake for about 10-15 minutes, until the feta cheese begins to brown slightly. Serve on two plates and garnish with some basil.
