Squid tagliatelle in sweet curry sauce

Ingredients for 4 servings:

  • 2 squid(s)
  • 1 banana(s)
  • 1 orange(s)
  • 1 tsp curry
  • ½ lemon(s)
  • ¼ liter vegetable broth
  • 200 g pasta (tagliatelle)
  • 1 pinch of salt
  • Oil (heat-resistant)
  • Sauce thickener

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the squid into rings and fry in a wok (or pan) with oil until no longer chewy. Meanwhile, slice the banana and drizzle with a little lemon juice on both sides. Add the curry powder to the squid and mix well. Pour in the vegetable stock and simmer for about 10-15 minutes. Pour in the freshly squeezed orange juice and add the banana slices. Season with salt. Season the sauce until the curry, banana, and orange flavors are noticeable, then thicken with a sauce thickener. Serve the taglitelle cooked in salted water either as a “nest” with the sauce on top, or toss it directly into the sauce. The quantities are intended as a snack or the first course in a multi-course meal. The amounts of curry, banana, and orange juice can be varied according to taste. Enjoy!
