Ingredients for 4 servings:
- 800 g squid(s)
- 400 g mussels (clams)
- 3 sprigs flat-leaf parsley
- 1 clove(s) garlic
- 2 tbsp cheese (Pecorino, alternatively Parmesan), grated
- 1 egg(s)
- 3 tbsp breadcrumbs
- 5 tbsp olive oil
- 250 ml dry white wine
- Salt
- black pepper
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Prepare the squid for cooking. Wash and brush the mussels, then cook in boiling water for about 5 minutes, shaking them gently, then drain. Remove the mussels from their shells, discarding any that haven’t opened, and roughly chop the meat. Wash and finely chop the parsley and crush the garlic clove. Mix the parsley, garlic, mussel meat, pecorino cheese, egg, and breadcrumbs with plenty of pepper and a good pinch of salt. Stuff the squid with the mixture and tie them with a toothpick or kitchen string. Heat the oil in a large pan, add the squid, and sear on all sides, turning them gently. Season with pepper and salt, and deglaze with the wine. Cover and simmer for about 30 minutes, until the squid is cooked through.
